Frittata for two

Super easy and quick to make! You can use any veggies or cheese of your choice, this is just what I had in the house and used for my recipe. 



INGREDIENTS

6 large eggs

1/4 cup cream / milk

1 - 2  garlic cloves, minced

Olive oil / oil of choice

Salt & Pepper to taste 

Basil leaves for garnishing (optional) / Rocket leaves for garnishing (optional)

Grated cheese - Cheddar is best but use what you have (Feta is also delicious!)


VEGGIE OPTIONS:

Baby marrows (zucchinis) 

Cherry tomatoes

Kale / spinach - chopped / baby spinach



METHOD:

  • Preheat the oven to 180 degrees Celsius (350 F)
  • Whisk the eggs, milk, salt and pepper
  • Heat oil in a skillet or non-stick pan over medium high heat (oven proof pan/skillet)
  • Add the garlic and fry for a minute or so, add the veggies and keep on stirring and frying until just done (turn down the heat)
  • Add the egg mixture and grated cheese and cook for about 3 minutes until sides are just set 
  • Transfer pan to the oven and bake for about 8 minutes or until the center is set and the cheese melted
  • Rest for a minute or two and cut into slices
