Fabulous Lentil Salad

This is really nice! And healthy too! 




Ingredients
1 tin lentils, drained
1 - 2 Tbs Italian parsley, chopped
1 - 2 Tbs chives, chopped
60 ml olive oil
40 ml red wine vinegar
1 yellow / red bell pepper, sliced and chopped
salt and pepper to taste
1/4 - ½ cup white Cheddar cheese, cut into little blocks


Method

  1. Pour the drained lentils into a serving bowl
  2. Add the parsley, chives, pepper and cheese and mix well
  3. Combine the olive oil and vinegar in separate jar and mix and stir into the lentils
  4. Season to taste with salt and pepper
