Lemon Pudding - Oxford '77

Outstanding!


  • Beat together 1/2 cup sugar and 1 TBS butter
  • Now add in this order:
    • 2 TBS flour
    • pinch salt
    • rind and juice of 1 lemon
    • 1 cup milk
    • yolks of 2 eggs
    • lastly stir in 2 stiffly beaten egg whites
  • Bake in buttered dish, standing dish of hot water for about half an hour
  • Seems strange mixture, but comes out with crust on top, and like lemon cheese underneath
