Stuffed Chicken Breasts with Feta & Peppadews

INGREDIENTS
4 skinless chicken breast fillets
Chicken spice
1 slice feta cheese, crumbled
5 piquant peppers (pickled Peppadews), sliced thinly
Soy sauce

METHOD
Ø  Season the chicken breasts
Ø  Cut a slit in each breast, starting at one side, being careful not to cut all the way through
Ø  Put the crumbled feta cheese and piquant peppers into a bowl and mix well
Ø  Divide the mixture into 4 equal parts and spoon 1 part into each chicken breast pocket
Ø  Secure the chicken breasts with string, and toothpicks if necessary, and sprinkle a little soy sauce over (and black pepper if preferred)
Ø  Cook the chicken breasts over low heat in oil in a griddle pan, turning frequently, until done (turning carefully to keep the stuffing inside)
Ø  Serve with grilled veggies


NB: Don’t forget to remove the string and toothpicks before eating!!
