Eggplant Stacks

I once wanted to make something with an eggplant and didn't have much ingredients around, so I came up with this and this is still a family favourite today! In Afrikaans we call it "Eiervrug Hopies".  It's lovely for a light lunch or just as an accompaniment to any dish. 




Ingredients:

Eggplant
Cheddar cheese, sliced or grated
Tomato, sliced
Robertson's Garlic & Herb Spice 
Robertson's Garlic Flakes (if preferred)
Butter 


Method:

1. Slice the eggplant in slices and arrange on a baking tray

2. Top each with a tomato slice

3. Sprinkle some grated cheese over or top with a cheese slice or two

4. Season to taste 

5. Dot with butter

6. Bake in the oven at 180°C for about 15 minutes or until cheese has nicely browned and  eggplant is cooked through


Notes:
- You can use any cheese you prefer; like Emmentaler cheese or even a Creamy Blue
You can also add sliced mushrooms if you prefer
