Sticky Lamb Ribs
Recipe from One-Two-Three on the Table - my absolute stalwart in the kitchen! I can't do without that book!
Makes 2 – 4
portions
1, 5 kg lamb ribs, cut into riblets
Salt and freshly ground black pepper
125 ml tomato sauce
125 ml chutney
60 ml sweet chili sauce
60 ml soy sauce

Preheat the
oven to 160°
·
Line an oven
dish with baking paper or aluminum foil
·
Place an oven
rack inside the prepared oven dish. Arrange the ribs on the oven rack
·
Season with
salt and pepper and a few drops of lemon juice
·
Prepare the
sauce by mixing the tomato sauce, chutney, sweet chili sauce and soy sauce
·
Spoon the sauce
over the ribs
·
Bake for 20 to
30 minutes
·
Turn the ribs halfway until grilled crisp on all sides in the sticky sauce
·
Also use a
brush to baste the ribs with basting sauce that dripped onto the baking paper
or foil
·
Serve with
chips
The
ribs can also be grilled over the coals instead of in the oven. Just brush over
some basting sauce every now and then while grilling.
