Penne Pasta with Duck Legs
Now this one is something special! Amazing flavour and taste!
Definitely one you can serve up for the boyfriend...or girlfriend you want to impress.
Adapted from a web recipe I found.
INGREDIENTS
4 duck legs
1 onion, chopped
1 carrot, peeled and finely sliced/chopped
2 cloves garlic, peeled and thinly sliced
1/4 cup red wine
1 can whole peeled Italian tomatoes
1 cup water (or chicken stock)
olive oil
Grana Padano / grated Parmesan cheese

Grana Padano / grated Parmesan cheese
DIRECTIONS
- In a thick bottomed casserole heat some olive oil and add the duck legs and cook until brown on all sides; about 10 minutes
- Remove and keep warm
- Add onion, carrot and garlic to dish and cook until soft
- Add wine, tomatoes, water/chicken stock and bring to a boil
- Add duck legs and bring to a boil, cover, reduce heat and simmer for about 40 min to 60 min
- Remove duck meat and slice into bite sized pieces (remove from bone) and return to casserole and simmer for another 20 min or so while the pasta is cooking, until the sauce is nice and thick
- Season with salt and pepper and serve with Grana Padano (grated Italian cheese) or grated Parmesan cheese over the pasta
