Onion Marmelade
Ingredients:
4 large brown onions, sliced (preferably red onions)
1 cup brown sugar
1 cup red wine vinegar / brown vinegar / apple cider vinegar
100 ml Balsamic vinegar
Salt & Pepper
Paprika
Thyme (dried)
Cayenne Pepper / 1 finely chopped chilli
(optional: add a bay leaf to the above ;
or try the following combination: cinnamon stick + star anise + clove) *Thank you Sonja Carlyle
*you don't need cooking oil for this recipe!
Method:
- Put the onions and 4 TBS brown sugar of the measured out sugar in a large pot; mix well and cook over medium heat for about 25 minutes or until the onions looks caramelized. Stir from time to time; keep an eye on the pot
- Add the vinegars, rest of the brown sugar and a pinch of Cayenne pepper, a pinch of Paprika and Thyme or any of your spices/herbs and cook further - stirring often; until most of the liquid is reduced; this takes about 15 minutes; when you see "large bubbles" on the bottom of the pot when you stir it's almost ready - keep a a bit of the liquid
- Add salt & pepper to taste
- Let it cool
- Bottle in sterilized jars
- Should keep in fridge for 1 - 3 months - (sugar & vinegar combination) - probably less because it's so nice and you're going to eat it all long before then!!!!;-)
- Makes 1 medium glass jar
NOTES:
- Spices/herbs etc. that would work well: fennel; star anise; cinnamon; thyme; rosemary; garlic - just be creative!!! :))
