Lemon Poppy-seed Muffins

The only lemon poppy seed muffins recipe I make! Thank you to the "Easy as Pie" blog spot! This is soooooo delicious! 




Makes 12 medium muffins 

Ingredients
3/4 c sugar (I used brown sugar)
zest of 2 lemons
2 + 1/3 c flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 TBS poppy seeds
1/3 c + 1 and a half TBS oil
1/4 c milk
5 TBS lemon juice 
2 eggs
1/2 c plain yoghurt (I used double cream)

Method

  1. Preheat oven to 180 degrees Celsius 
  2. Grease muffin pan
  3. Combine the sugar and lemon zest in a bowl and rub together with your fingers until the sugar is pale yellow
  4. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt and poppy seeds
  5. In a separate bowl combine the oil, milk, lemon juice, eggs, yoghurt. Whisk together until combined
  6. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over-mix! 
  7. Add spoonfuls of mixture to muffin pan; fill about 3/4 of the cups
  8. Bake for about 20 minutes or until done
  9. Cool & Enjoy!
