Lemon Poppy-seed Muffins
The only lemon poppy seed muffins recipe I make! Thank you to the "Easy as Pie" blog spot! This is soooooo delicious!
Makes 12 medium muffins
Ingredients
3/4 c sugar (I used brown sugar)
zest of 2 lemons
2 + 1/3 c flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 TBS poppy seeds
1/3 c + 1 and a half TBS oil
1/4 c milk
5 TBS lemon juice
2 eggs
1/2 c plain yoghurt (I used double cream)
Method
Makes 12 medium muffins
Ingredients

Method
- Preheat oven to 180 degrees Celsius
- Grease muffin pan
- Combine the sugar and lemon zest in a bowl and rub together with your fingers until the sugar is pale yellow
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt and poppy seeds
- In a separate bowl combine the oil, milk, lemon juice, eggs, yoghurt. Whisk together until combined
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not over-mix!
- Add spoonfuls of mixture to muffin pan; fill about 3/4 of the cups
- Bake for about 20 minutes or until done
- Cool & Enjoy!
