Corn Chowder
Serves 4
INGREDIENTS:
6 slices of bacon
1/2 onion, chopped
1/2 cup celery, chopped
1 and 1/2 cup cubed peeled potato
1 tsp thyme
1 bay leaf
Black pepper to taste
2 cups chicken stock
3 cups fresh corn off the cobb
1 cup milk
1/2 cup cream
METHOD:
1. Fry the bacon until crisp and set aside.
2. Sauté the onion and celery until soft.
3. Add the potato; thyme; bay leaf; black pepper and chicken stock. Simmer for about 10 minutes, stirring occasionally.
4. Add the corn and simmer for a few minutes.
5. Whisk the milk and cream together and add and simmer for a few minutes.
6. Remove 2 or 3 cups and blend and add back.
7. Stir in half of the bacon (diced) and garnish with the rest when serving.
Serve with a nice crusty bread.
